Since you're a beginner and are just planning to put the panels on, I'd recommend getting the "no-stitch" kit or just fabric glue (you can still use it in combination with sewing).

And you don't need red knit specifically for the cuffs but you might still need stretchable fabric to let your hands slip through (or you can make the sleeves loose enough that you don't need that type of fabric).

Another fabric suggestion/idea for the red stripes would be to use red bias tape (since it's already cut and folded)

It's a totally feasible project anon, go for it.
