If you want something simple and flexible, I usually have like half a table of various books and I use these. They fold up and travel well and generally people understand that they're allowed to pick up and flip through. Another thing I do is to actually put a small stack of each book underneath the stand, so they can flip through but they see the other copies right there. For some reason people seeing a stack of books instead of just the one display copy seems to increase sales, don't ask me about the psychology there.

I've also seen people use something like this, but a small tabletop version: https://www.amazon.com/Steffy-Wood-Products-Book-Display/dp/B008FLBANW It looks nice but is more work to transport.
