Yay, finally an opprotunity to pass my knowledge of canti builds on! Okay i did mine out of eva foam and various fiberblass parts, and it took me a little under two months to do. I salvaged parts from a lot of my other builds and it worked amazingly well. For example, the helmet is actually a really large masterchief helmet from halo turned backwards and cut along a contour line. And the forearms are iron man forearms i kept from a scrapped project and then we just again flipped around and sawed up. I wish idve saved the foam patterns i made for it, id totally send them your way. But to answer your question, if you have a lot of time and energy to put into it, you could probably finish up a pretty good looking canti in about a month, if you hustle.
