Disney employee and past princess here, princesses are cast one their looks, personality and talents. Disney wants people to fit multiple princess roles if necessary, like my time was Aurora/Cinderella (same height) If you can sing or act very well they put you on stage, if you are a great conversationalist you are doing the character meet and greets (signatures and stuff) they also look for good faces that animate well far away for parades and large stages shows.

People tend to think that Disney hires really beautiful people for face characters but in my experience (and what my cast manager said) they are looking for 'pleasingly generic faces' faces that handle stage makeup well, different angles and don't have features that are too distracting. I got docked on my five head but they just throw a wig on you anyway..
