Brands continue to produce old school/old school inspired pieces to today, and people didn't just quit wearing it overnight. But the mid-2000s saw a lot of changes in the style from the early 2000s. Pic related is an old AP shoot for Twinkle Mermaid back in 2006, and if I recall much fuss was made about them having pastel wigs on in the ad. While it's a far cry from the height of the OTT sweet trend, it was still a hint at what was to come and a departure from the natural hair colors or Vkei hairstyles.

On the western side of things, 2006 was the year Kamikaze Girls came out in the west and while Momoko is oldschool as hell, the film brought a lot of new people into the subculture just as AP was hybridizing with diabetes. Throw in a good number of the new people being influenced by the ongoing anime/manga boom and the rest is history. 2006 was also the year the original Lolita Handbook came out to try and codify what "lolita" was and how to put an outfit together, and 2008 was when the English version of the GLB came out.

The publishing of the handbook to me marked one of the biggest turning points in western lolita fashion between old school and not old school since it marked a change in the community mindset.

Sorry, this is probably really jumbled. Tl;dr I think enough had changed in the mid-2000s that it was a transitional era between old school and OTT sweet.

If I re-made it I would include Twinkle Mermaid (2006) and another early screen-print, I regret not representing that screenprinting and applique started trending before digital printing did. Twinkle Mermaid was extremely popular at the time and the way it was styled in brand ads really began the full transition away from oldschool and into the OTT sweet wig look. It was also a sort of halfway house between screenprinting and full detailed digital printing, because it's a screenprint (as far as I know) but used multiple colours instead of just one.

I'd also try to make the whole of the second half less cool-toned, represent at least one or two popular/influential non-AP sweet releases, and expand beyond 2016. I ended on Milky Swan at the time because it really seemed to sum up the direction lolita was going in, but AP have changed their aesthetic again now and Milky Swan wasn't even that popular, so I'd probably delete it. Misty Sky belongs on there somewhere too I think.

Mandarake operate a thrift store/consignment sort of thing and sell some lolita items. I have a friend who bought some old brand stuff from them while in Japan but I'm not sure how long ago they started doing that.
