ETH inflation model is unknown. Vitalik himself stated it would take 100 years for ETH supply to reach 100 Million. It is at 107 million in 3 years. ETH monetary policy is not set in stone. It's make it up as you go. The inflation will go up again when ETH has to please both stakers of ETH and miners in a hyper POS/POW model
