You don’t need to simmer chicken for 12 hours, 6 is more than enough, you do 8-12 with beef or pork. You also don’t need to buy whole chicken, because you will end up with meat without flavour, same with tights, just buy chicken scraps for pennies same as you would buy beef bones.
