Ethereum, Neo, Stellar, etc every coin has "smart contracts", a way to pay out to someone when an event is triggered.
Example would be "if the Dodgers win the series, pay John".
Only problem is, how do you get that data of them winning into the contract? Someone needs to do the work to "transmit" it, much like Bitcoin being sent back and forth and miners doing the work.
That's where Chainlink comes in, decentralized oracles fetching data and plugging them into smart contracts on any blockchain.

It or something similar to it is necessary for smart contracts to work properly. Many projects could use it.
e.g. REQ needs it so people can receive in ETH while the buyer pays in BTC. They have BTC to BTC and ETH to ETH support up now iirc but can't convert between chains. LINK connects data to blockchains in a very secure manner.

and what I posted is only a piece of the puzzle.
Imagine companies could use smart contracts without ever owning crypto.
Chainlink would connect to their existing API, meaning Swift, PayPal etc. Basically just whatever they use to pay companies/contractors with currently. The input would be through that API, Chainlink fulfills the contract, grabs the data etc then outputs it into the API the payee uses as well.
