Lets say the worst happens and BTC crashes below miner profitability. Wouldnt being in a shorting position be bad since you're now holding a completely unliquid asset?

Mining never stops. It can't stop. Difficulty readjusts if all miners stop. If that happened you could mine BTC on a laptop again.

Mining farms buy electricity in 1 year contracts. They've already sunk their costs. They buy miners in bulk. They HAVE TO run the miners to make money.
