Market cap for organisations makes sense because orgs have assets and liabilities, and a price for shares of that company have been established based on its equity and cashflows, and therefore a value for the org can be deduced. The org has an inherent discernible value and can be compared to other companies, in terms of value/size, using this metric. Currencies don't have a value which is discernible in the same way.

Put it this way, what would happen to the price of Ripple if everybody tried to sell at the same time? Its value would collapse. What happens if every shareholder in a company tries to sell at the same time? Yeah the price can collapse in the short term for a public company but ultimately the equity of the company will be extracted by somebody (if only by liquidators), i.e. the market cap of the company is realised.
