But the value doesn't come only from its own blockchain. The link token is just something to allow people to be paid for the real service which is hosting a node for a decentralized network. Those nodes can give data to any blockchain since it is blockchain agnostic so it isn't just restricted to the eth blockchain.

Because people don't want to get payed in some random shitcoin that decided to create its on blockchain. The link token allows a single currency to be used that fluctuates in price based on its own merits rather than relying on some other coin to not screw the node operators over. If eth were to be used and it dropped 90% in price because they found some slaves and child pornography in his basement then the value of being a node operator would also go down.
