like if someone tried to brute force my metamask seed by repeatedly creating new wallets the universe would actually end before they probably hit it. Like the chances are so low you would have a better chance at finding a specific atom in the universe while also knowing the exact time you'll find it, where and the such.

Possible, yes. You're far more likely to have your crypto syphoned by allowing your wallet to connect to some dodgy site, but if you do end up downloading malware that has crypto keyloggers in, it can steal seed phrases and gain access to your wallet.
