For me it's potatoes. More nutritious than rice and they don't cause so much gas like beans. Also lentils, especially split red lentils, they don't cause so much gas because they don't have skins on the outside.
Throw in some eggs and/or cheese for cheap fat and protein and your diet will be fairly complete. Also cheap cuts of meat or organs like the other anon said.

If I go vegetarian but still drink milk and eat eggs is that enough nutrients to thrive? I've pretty much stopped eating pork lately and feel sympathy for other animals bred and slaughtered in captivity, and have developed a bit of a revulsion for the industrialization of the meat industry.

When I was unemployed many years ago, I went on EBT for about 6 months to avoid spending my savings and investments on food. You can get a lot of food for not very much money if you eat brown rice, eggs, a few vegetables, apples, peanut butter, macaroni and cheese. Apples and brown rice should provide enough fiber in your diet. You can get bags of apples for like $3 in a lot of places. Basically I recommend just learning how to stir fry and you basically cook up onions and carrots and green beans or whatever other cheap vegetables you like and put that over brown rice. You can also make fried rice this way and add a scrambled egg to it. You can steal onions sauce and other condiments from a Chinese or other Asian restaurants pretty easily. A lot of places leave bottles of different stuff on the table. It's not like you have to go back there.

Broseph you can survive off wheat bread and peanut butter for quite some time. Add in some milk and cheapest store brand juice (with vitamin C) for extra nutrients. Maybe some cheap cheese, veggies, and fruit to snack on. And occasionally some store brand velveeta if I want some hot goyslop.
Oh and I forgot to mention what makes this work well is if you drink lots of tea and coffee, it suppresses your appetite.

This but unironically. I took the oat pill last year. It's very filling and you can make it sweet or savory. I like to heat steel cut oats for 25 minutes. Then I add vanilla greek yogurt, raisins, brown sugar, cinnamon, nutmeg, and sometimes maple syrup. It's delicious and can keep me satiated for 6+ hours.
