sure your original eu country would probably hunt you for your taxes but they cant legally do anything as far as i know
denmark considers crypto to be the same as e.g. paintings that increase in value over time and are therefore tax free under their taxation laws
bulgaria has been shilled here to have a 5 year tax free period for crypto or something in order to attract outside investors etc
there is going to be a cooperation between all eu banks around now i think in order to avoid hiding assets within the eu, this will extend to include many non-eu banks in 2018
i honestly dont know how this applies to cashing out crypto, though a dual citizenship should legally remove you from the problem
the main problem is probably the verification for exchanges, as such could be used by your original country to imply you made the money while still in the country for which they will want to seek tax settlements
though I doubt a country like bulgaria would cuck to the eu in such a case, neither do i think denmark would unless you're from scandinavia at which point i think they might comply out of some retarded sense of respect

in the end, if you have your citizenship in the country you cash out, your original country should not be able to tax you by their laws
theres a whole bunch of laws to allow working within the eu and tax in your country of citizenship, the same laws are legally applicable for crypto
