It's not a new concept. GNS's gTrade platform has 50+ pairs and decent leverage. A portion of all trading fees go back to GNS holders. You kinda need the revenue from the dapps before you can make big promises of profit sharing, but even then, you're gonna have liquidity issues unless you constantly reconfigure pairs based on market conditions, or have outrageous trading fees, or investors with really deep pockets.
