because it's impractical. people are paid in fiat. the only "convenient" crypto on-ramps are KYC exchanges which suck for a variety of reasons.

-webpages crashing under heavy loads
-terrible to non-existent customer service
-arbitrary account lockouts and subsequent re-validation of KYC ID at the work possible time
-long clearing times for fiat transactions

also consider most cryptos have horrible confirmation times and horrible transaction fees. volatility means it is a terrible store of value and no same person is tying up a considerably proportion of their money (or their business's money) in unaudited/barely audited stablecoins.
