Best way is to get their info, make it clear that because so much milk was poured it went all under the furnishings and the shop requires a full day cleaning for hygiene reasons with a specialized company.
Have the specialized company charge a substantial amount of money than charge them for the revenue loss of a full day shit down and for the cost of all the perishables in the store that were supposed to be sold the next day.

You could probably hit them for over 100.000$ which should remind them why you don't have such unemployed behaviors.

I just finished a second round interview for a sales job advertised as 70% travel. My last job was maybe 15% and I was miserable on the plane and in the hotels. I'm gonna shoot for much higher salary this time if offered.
