Because of trust. Lets say you sell something of value to "bob" for a stone, then try to spend the stone later and bob says you never sold him anything because bob wants to keep the stone. Its your work vs his and you otherwise have no recourse.

You can kinda overcome this with reputation and trust, or to have all transactions witnessed by everyone, but that only works in a small local community, where everyone trusts each other, but not in a modern, globally connected world with billions of participants where its impossible for everyone to know or trust each other.
