If eating rice and beans makes you want to die, the first issue is you are not used to the fiber. Beans have a lot of fiber! This is in the long run good for you, but you should ease into it, give your gut a chance to get strong.
Next, beans have a substance in them that all people are allergic to. Red beans have the most, and you shouldn't really eat them. Instead, eat pinto beans and navy beans which have less.
Next beans must be prepared correctly. Canned beans are a bad idea for a few reasons, leaching from the can liner to mention one. So, dried beans you gotta soak them overnight, and then slow cook them all day. Cooking like this is the origin of human dominance, but we have forgotten that you must cook staple foods to predigest them.
Finally of course you need other foods as suppliment to fill out a nutrition profiles.
