1) Tradies - Electricians, plumbing, etc... It's easy to have a monopoly on a small town if you do simple research, as there's a lack of tradesmen in sparsely populated countrysides and boomers will pay you $80/hr to install chandeliers
2) Medical jobs - Elder care, medicine, nursing, etc.. Aging population means that there's a constant supply of meat
3) Infrasturcture - working powerlines, setting up fiber optics, tarring roads
4) Pensions and gibs

But yes, ever increasing economic hyperinflation is making the urban/rural divide even more insane as young people are bottlenecked into ever decreasing options and expensive degrees and programs which pay livable wages. In the small town I grew up in the local city council was a bunch of nepotistic Karens who claimed to work 2 jobs worth of pay but only worked 1 job so they made like ~100k a year living in a town where the average house price is ~120k.
