I've thought about this too, and I feel like the only success I'd have is using running water along a river into work like a mill to grind grain, which isn't really groundbreaking. Maybe could build something to hammer or saw something or wash clothes automatically. Even then that'd be a lot of effort to create.
Creating something like a ram pump to move water uphill would be really beneficial to get some kind of indoor plumbing, but I imagine it'd be difficult to make the pipes/valves.
You might enjoy watching Dr Stone, it's juvenile but a lot of the show is about reinventing technology using primitive materials, but I can't remember much about it.
