I'm at a point in my career where I must choose to go into either AI, communications engineering or computer engineering. What's the most profitable and less saturated (in Europe) field?

a decent choice, but make sure you include electrical engineering + mechatronics
for a good future you need to know:
+ programming skills
+ circuit design & PCB layout
+ firmware/embedded dev & debugging
+ hardware design
if you have these skills, you can branch out into almost any tech field, including weird freelance stuff like off-grid solar
