If one of the points of crypto is Anonymity especially privacy coins like Monero why is it so hard to convert cash to crypto in an anonymous way, All the exchanges that let you convert cash to crypto require some form of KYC wish kills your anonymity Most places don't have some kind of machine were you can put cash in and get crypto back.

On bitcoin, yes, they can trace every move your BTC makes. On Monero, no. You bought coins from them and they knew that anyway, KYC just formalised that. Whatever you do once you've got the XMR is anonymous.
