I bartended through my 20s in a big east coast city, had a blast made about 85K year and pretty much partied but in the end had nothing to show for it because of the lifestyle. We’d make all our money in 9 month period and spend the slow December - February months in Costa Rica.

That's a top tier service industry salary. You don't get there without hard work, excellent interpersonal skills, good genetics (you have to be good looking and presentable), and high level training (wine, alcohol, food).
