Nothing is truly recession proof (all fields are vulnerable to "something", especially when narrowed down to smaller companies or organizations), but the roles that come to mind are any kind of operational work (most trades, hands-on medical work, lawyers, accountants, etc). The world keeps spinning even if the economy is bad and those roles are what keep it running. The roles that are most vulnerable are unskilled labor (retail, food service, HR, recruiters, etc).
