Because the price of Link doesn't matter to them at all.
The fee for the chainlink services will most likely be set in a stable currency like USDC and the swapping to pay the Link node will happen in the background.

Good question OP. The answer is they wouldn’t, at all, unless they feel like getting bilked for cash to interact with “tokenized assets” when the alternative is just sending a regular swift for fractions of a penny.
