You have to be more precise with your question.
If you become a doctor in private practice you'll have a great income with high certainty - you won't become a billionaire however.
If you found your own start-up company you could have more than as a doctor but with a lower probability.
So really the question is to maximize earnings times probability.

Just an example. It's not really about stability rather predictability. So you should focus on finding a career/major where the average graduate makes a good amount. Most likely you won't be the one in a thousand whose startup makes millions - and most likely taking a chance like that is not worth it. I started as a software developer (average pay) and decided I wanted to become a doctor - I made it to medschool (not from the US) but got a great offer building software as a self-employed dev - the pay is much higher than what I could expect for years after graduating. I'm actually debating right now what I should do. Being a doc is a lot better than being a software dev wagie, but having your own software company is better than being a doctor.
