Redpill me on hardware wallets.

Why can't I just generate my keys offline, write them on paper and keep them in a safety deposit box?

I switched phones and lost access to my trust wallet. Thought I had a screenshot of my key but I don't

You won't be able to sign transactions offline, but if you just want a cold wallet, then yes, that'd be just as good.

You lose access and your money is gone forever.
At least when an exchange blows up you might get something back in ten years

Use a steel wallet in case your house burns down

because thats not the purpose of a hardware wallet, they're not for hodlmonkeys they're for people who actually want to use their coins and potentially on an infected computer.
also lmaoing @ safety deposit box you may as well just open a bank account at that point

You can, hw wallets are about having easy access to the keys for signing, if you pretty much never plan to send funds out, a paper wallet is fine
