What is a business, or a "side hustle" or whatever, where i can start with a very little amount of money (less than like 500) and come out with a decent income? I only have maybe 2500-3000 dollars worth of bills every month, so I'm not exactly looking to get rich. I don't even care if it's super saturated as long as I can quit my low skill day job

nothing easy.
whatever path you will take will be grinding.
even more if you have no skills or experience.
Your options are:
A) Service based business, can be anything from photoshop to marketing, if you have a skill you can sell it if not you can outsource, might get fucked up since you can't differentiate good from bad work.
B) Selling shit online, ebay, etsy, amazon, (((Shopify))) it's not 2017 anymore so no more aliexpresss, you need to become a retailer for real companies, you will need more than 500, so i'd start with ebay and etsy until you make a couple grand.
C) Info business, really oldschool, affiliate whatever, know people who make money with this. One guy started making 600 a month his second month, but he was crazy, had like a website that showed sunglasses and he would list tons of sunglasses a day on his website and then make money off the commisions of people who found them on google images.
