Starting some sort of specialized healthcare facility/chain would be a good bet. Anything involving elective procedures that won't get cucked by medicare (plastic surgery, LASIK etc.) is a good bet.

Beverages and chemicals (goyslop, anyone?) are also among my favorites, pretty non-cyclical stuff too.
