How will they know what's in your head unless they ask for specifics.
So in terms of training, get them to drive it and define what they are looking for.
Then simply give the minimum info (how will they know there's more, if you don't divulge it).
Also, I'm not really sure it's legal to hire replacements and ask you to train them unless you're being made redundant. Now if they're expanding the team that's different but then you wouldn't expect to be laid off. Which way it is should totally be made clear at the outset, otherwise go to HR and say you're being replaced by cheaper, inexperienced staff and demand formal redundancy process if so.
