Man I wish I had the discipline needed to eat healthy and stay active. It seems like every time I try, it goes good for for a few weeks/months, I'm eating healthy, cooking my own stuff, counting calories, exercising, losing weight, feeling good, and I start focusing on other stuff like work or hobbies and I revert to old habits of ordering food, or binge eating unhealthy shit, sitting around 24/7, and I stop giving a shit.
I have nobody to blame but myself but man I don't know how to maintain the discipline to overcome this. I've done 3 day fasting, one meal a day, keto, it works for a bit, but I don't have the discipline to stick with anything for more than a few months and it all falls apart.
I want to start a family, but it seems like that won't happen until I can at least be at a healthy weight.

I think if we can fix what you at, it wont' matter if it's 1 meal a day, fasting, ket or whatever.

If you can't do water/unsweetened tea + high quality salads (make it as tasty as possible), you're eating something that's making those taste worse than they should.

I go through spurts, sometimes I'll go months without drinking anything but water, other times I'll go months having a few sodas a day, usually diet, but sometimes not. Tried going with flavored water and that's alright but gets boring.
I've never been a fan of tea so don't typically have it. I don't mind salads but won't go out of my way for them, I don't like most salad dressing so I don't add any when I make them, but if the ingredients are good then the salad is good.
For a bit I was having a bagel with cream cheese but it's weird because after eating it I immediately felt hungry again as if I ate nothing. So I switched to making a fried egg with an english muffins and a tiny amount of butter and that seems way better. After doing the longer term fasting I feel like hunger is much easier to manage and understand, so I think there's something else going on with why I keep falling off the wagon, so to speak.
Maybe my gut biome is fucked, I tried some pre-packaged kefir thinking it might help but it tasted way too sugary and I think I've somehow become lactose intolerant because dairy gives me the shits.

If the lactose intolerance developed recently and you have no other obvious symptoms it could be normal but can also be celiac disease, easy to check going gluten free for one or two weeks and see if you digest dairy then.

I know and you're right, that's all true.
But how do you continue to care enough to keep tracking and keep eating less? After a few months you just stop caring, you focus on other things, shit comes up, other things become higher priority in your mind, and the good new habits you developed start to fall apart because they take energy and attention to maintain.
I guess just don't be a bitch and just keep doing it, or force yourself to start caring somehow. idk but this shit has been a struggle for me my whole life. I feel like I've learned all the relevant facts about what works but not how to keep doing it even when I know it's what works.
Maybe I just need to hire a personal chef for a year or some shit that will make all my food to the exact calories and nutrition I need so I just remove myself completely from screwing up. It's a high cost but fuck I can't keep failing.
