because i know them and they told me? they were able to break even on startup cost in 6 months and quit their old jobs. they have a 3 county circuit and set up in parking lots of dollar stores and usually sell out after a few hours.

Makes sense. I knew a guy with a hotdog truck who had lines all day. It was right near a park/school. I assumed he was doing real well for himself but even he told me that things weren't doing so well lately, so you can never really be too sure with that type of business.

Food truck really does sound fun!
I'd like to do one, but when it comes to cleaning I'll admit I'm not the most motivated. Perhaps if I wasn't exhausted from my day job cleaning wouldn't seem so daunting, but food service standards are admittedly far higher than mine at present.
I wouldn't want standard food truck fare. What would you sell in yours? Quesadillas take like 2 seconds to cook if they're prepped, you could stack 50 of them in a cooler & go. $10/per would be an easy sell and you could probably make 3 or so from a single chicken breast.
Chicken breast packs sell for $12 here and have 5 or 6 breasts. A food service provider would be cheaper, but going off the prices available to me, 5 breasts x 3 quesa's made with each x$10 is $150, not a bad profit from the $12 price tag for chicken. A block of cheese costs $8 and veggies cost nothing comparatively. So, spend $20 to make $150, doesn't sound bad. Especially because you'd have access to bulk supplies instead of retail prices.
I've also never seen a quasa sell for $10, they're always like $13.50 anywhere you go, so you could probably sell them for that.
