That's probably because there are always less transactions on the weekend.
If you compare last monday with today, the number of unconfirmed transaction stayed at the same level (was never empty), even though there were an average of 7.1 blocks every hour in the last 7 days (because difficulty has not adjusted yet, the target in 6)

let me do the quick maths:
>difficulty increases by 15% while hashrate stays the same
>that's 148 blocks a day instead of 170
>average block contains 2k transactions
>that's 44k transactions a day which go into the mempool
But that's if you assume that the demand for transactions stays at the same level. But with higher price(fees) the demand for transactions will also decrease.
