I JUST started using Bittrex yesterday and transferred about 10k in crypto there.

I was thinking of spreading out my assets across Poloniex, Kraken, and Bittrex so if there is a hack I only lose 1/3 of my crypto.

Is that a good move?

Unpopular opinion because of anonymity issues and lack of alt coins, but I really like GDAXX.
- fiat is FDIC insured
- no fees on buy or sell orders
- easy to transfer money in and out

- limited pairs, no stops
Bitrex +More pairs, high volume, Stops
-UI is terrible
Cryptopia +even more pairs(posw chancoin etc), medium volume
-bad ui, some pairs have no volume
Hitbc/Etherdelta - Same pros and cons

QuadrigaCX for stability. It stayed up this afternoon when a couple other big exchanges went offline under the traffic. Their fees are pretty low as well. Only thing is they only trade btc, bch, btg, ltc, and eth.

What exactly is the connection to coinbase? If I do a SEPA transaction to coinbase, can I go to GDAX to gamble there? Or... And if this indeed just "a fancier GUI" by the same guys, why would I need two separately verified accounts, and end up with coinbase being fine and verified, but GDAX demanding a second ID? What's going on here?

I like GDAX and would agree with you ... except I just tried to withdraw ETH to a wallet, used my 2FA, got them message "The transaction could not be completed." No specificity - just that. If you're okay with being entirely in the Apple of coin markets then go for it but I'd diversify throughout exchanges.

Binance - Fast, Lists Coins fast, Cheap fees(0.05%), and nice interface.

Bithumb - Cheap fees, crazy prices for easy abritaging, sorry amerifats.

Bittrex - lol u plebs still using this shit.. laggy interface with 0.25% fees lmao get cucked.

This, but be aware if Binance is the only high volume exchange for your coin, expect some fuckery. (see link, req, etc) The botting on that side is unreal and will moderate any swings into nice profitable gains for the botters. Useful if you like to swing trade thought, you are, or should be, smarter than a script.
