I'll start with my favorite Anime:

Kaiji: Ultimate Survivor - a desperate wojack who risk his life to pay his enormous debt.
Akagi - a genius gambler who always bet everything including his life just to feel alive. Akagi is a cold, relentless character. He cares little for money or for his own life.
One Outs - a baseball anime, but the protagonist is a natural-born gambler who stops at nothing less than completely crushing his opponent's will to win.
