I would say that an impressive project is something where you showcase that you know how to use various tools to accomplish some useful task, the more "wow" factor the better for the midwit managers and hiring staff. "defi" and "blockchain" are hot buzzwords, that may be all the wow factor you need to put you in front of your competition.

but instead of trying to find a job where you'll be competing with millions of bugs and poos, instead you should be thinking of using your knowledge to start your own income stream. figure out some small niche where you can solve some annoying problem for people and charge them for it. this is the hard part, which is why so many people try to get soul-crushing jobs
