Sort of, I actually have a lot of experience with building off grid homes. A lot of this shit depends on your states building codes but you can build an incredibly cheap home in a season with the occasional help of 1 other person. The problem is that, in many states, you need a permit for anything over a certain square footage. Usually 200 to 300 sqft, buildings under this threshold are usually called "buildings of no consequence". One thing you can do to skirt the permit requirement is by building multiple building below that sqft threshold and connect them by breezeways. It's pretty important to avoid the permitting process if you want to build cheaply as the permits can cost more than the building if you build with say, strawbale construction, cob, or cordwood. Composting toilets are a great option but they do require maintenance. Not too hard but be prepared to handle you're own human waste or at the very least site the toilet so run off doesn't spread your shit out away from the toilet and toward your living space. 1k worth of solar panels, batteries, and a charge controller is more than enough to run lights, charge phones, laptops, and other low demand electronics if you switch to DC powered devices (think car chargers they don't have the ac brick). Internet can be had from long range wifi antennas, or just using your mobile data connection. All in all its completely feasible though very far from glamorous.
