The only thing with distilling is you have to also ferment. Do a bit of reading online "Homebrew" forums are real good info. Gotta make sure you have the right yeasts and fruit juices. NGL my first batches were iffy, but my stuff now is real good. One of my next batches is going to be a peach apple mead aged with bourbon soaked dark oak chips.

I use EC1118, Ive been wanting to get in to cultivating my own yeasts, just don't have the time or space right now.

This is a pure apple juice concentrate wine/cider it should be sitting right at about 20% right now.

Apple meads are called "Cyser" and I love me some Cysers. According to some historians the Norse had huge apple/apricot orchards and so they started mixing their mead with apples to cover brewing mistakes (bad flavors) and give it flavor in general. Its like the "missing link" from mead to ciders/apple wines.

I get pasteurized apple juice (can't have any preservatives) from the store in glass jugs. Dump out enough honey to get 2-4 lbs of honey in there. Mix it up and pitch the yeast. You can get more technical and have yeast nutrients (probably the most important when it comes to mead) and a few other things. In my experience though as long as you keep it a stable temp I like 68-72 max and in 3-6 months its ready to be bottled and aged lol.

NGL I used balloons for my 1st 3 batches and it turned out fine, I firmly believe its the process not the equipment although it helps. Oof yeee thats why it was off distillers yeast will strip everything flavor and smell out cause its just going to get distilled so for wines/beers its not grate. Look in to EC1118 or D47 for higher ABV brews and ale yeasts for lower abv. Juice on its own will go to about 5-8% without additional sugar.

My first software job was the best. I got paid shit, but the culture was amazing. Basically all men, no women except for analysts.
