Can someone explain to me why it is costing me $250 in gas to unstake my BAO? I thought gas was the same across all transactions in ETH i.e. it should cost the same to sell RBC for example on uniswap as it would to unstake my BAO. Is this incorrect?

Can someone point me in the right direction for actually learning about how gas works?

It is based on the smart contract I believe. And BAOMAN has said his gas optimization is not the best. Gas is also very high right now.

Gas fee is calculated by some multiplying a value called STARTGAS by the number of computational steps the contract will execute. STARTGAS is pretty much constant throughout the network at any given time but if your transaction will execute more code steps then the gas fee will be higher
