People often talk in term of ETH because a lot of coins not listed on the most popular exchanges are running on the Etherium network. As for sats (satoshis), its because BTC is valued so high that a lot of people don't even have 1 so it can be easier to express an amount of bitcoin you have by saying I have 5000 sats than 0.000...BTC.
