Price is highly dependant on PSA grading. Look on eBay for sold cards and then sold psa graded cards.

It costs a lot to mail in a grade them but the value improves drastically, as long as it comes back 8-10.

For cards in general.
Sealed product is generally the safe investment regardless of what it is.
Singles are a lot more volatile, typically meta relevant cards will spike while it's still meta and plummet down in bulk pricing once it is either rotated out or something takes its place in the meta.
For pokemon singles in particular, singles of charizard, or special promo cards are generally safe investments.
Even though sets like Evolution has increased further from it's last years peak, I still think it's a bad buy. It feels more like a sympathy play due to it's similarities with the original base set.
Evolutions was heavily reprinted, with it's packs being included in any kind of special kit, even after it was no longer valid in Standard, on top of that, the secret rare cards in that set, flying pikachu, etc are printed in the uncommon slot as opposed to normal secret rares taking the usual rare slot. Meaning that those singles in particular exists at a much higher quantity.

tl;dr don't buy evolution singles, buy evolution sealed at best if you want to touch that set. Look out for speciality sets like hidden fates/champion path/etc sealed those typically get good returns within a year or so. Charizard is an eternal chase card for the series.
Oh and several pokemon sets have terrible centering and that impacts PSA grading a lot, the difference between PSA 9 and 10 is a lot of money as a result.

Last thing about grading.

There also is a lot to be said about current modern sets and the current state of affairs in the world. I think these sets being printed right now are going to be high value in the future. You can't go to a target and buy Pokemon cards right now, they're incredibly hard to find. Printing facilities have been closed of operating minimally for a year now and these sets are rare. There are special sets coming out for the 25th anniversary this year too that were already going to be highly saught after, they are note going to be big money to get your hands on. Shining fates is a good example, the presales were selling out online before anyone had a chance to order. It's a great time to buy and keep sealed.

Well yeah, old cards go up in value over time.
old anything goes up in value over time if there is any demand for them.
Pokemon is popular.

Old cards are no longer printed so there is a finite supply that will slowly dwindle down as people take bad care of their cards.

The question is more about how much of that demand will still stick around for certain cards.
For that, generally Charizard is the typical chase card.

The easiest way to unload bulk is to dump it to some LGS/online store that has a buylist or is taking in bulk.
But you aren't going to get any decent money out of that. Especially if they are in played condition.
The best thing to do is to separate non-holo bulk from your holo bulk, and take the take to figure out the value for the holos you have and what condition they truly are.
The difference between a "light play" card vs a "near mint" card is a lot of money, which is one of the reason why sealed is better.
If you have access to your cards, you could post a picture of them and I can tell you whether or not its even worth the time to unload them.
