Most likely Trezor converts your crypto to USD / stablecoins while showing you that you still have your crypto.

Say that the price goes down and your coins are locked, then it's not a problem... when you unlock them they will just buy you the number of BTC you had and pocket the difference...

If the price then increases, they will buy you the very same amount of BTC for the very same price you locked at. If the price is still up by the time you unlocked them, you get the same amount of BTC but at a higher price.

You hedge your position against downside risk and you essentially pay the exchange when the price rises by having to make up the amount that they have to supply you with when the prices rise.
