I'm quitting my job tomorrow. I have enough money saved for 12 months of rent/food before I'll need to dip into my crypto. If I have $50k of ETH now, will I make it within 12 months by hodling?

It's both. Stressful work, unreasonable timelines (that I actually manage to deliver), and shit pay. They denied my raise this year so I'm done, the only thing that could keep me here is money and they don't want to pay up.
