But anything after that, they do not know. They don't know whether or not you still have it, or if you already spent it, or sold it, etc.

Yes, you're right. I made the assumption that the user had bought it on the exchange and then moved it off to his own wallet. But if you leave it on the exchange, then yes, they know that as well.

It is a closed-source wallet from what I have heard, which is suspect, but I have also heard that it is maintained by core developers of Monero. You have to be careful because there is no official MyMonero android app from what I have seen, but there are countless fakes that will rob you blind.

However, if you really like MyMonero, there is an open-source version of their site's backend called OpenMonero: https://github.com/moneroexamples/openmonero

But I would recommend using the GUI Wallet, or even learning the CLI (command line interface) - it is very easy once you get the hang of it. If you have any trouble learning them you can post on these threads and a based Monero Chad will assist you.

But never give your seed phrase to anybody, or send them a wallet file, etc.
