What keeps people from just buying and selling wSTA and bypassing STA in it's entirety keeping burn from happening at all? Is it arbitrage bots and traders constantly trying to keep the balance and wrapping/unwrapping?

Yes. If there’s profit to be made due to the unbalance, someone will take it.

It doesn’t matter if people only trade WSTA as this will disturb the balance, which will then be taken care off in a way that causes burn anyway.
