Ok here are the only TWO currency you can buy safely : bitcoins, and ethereum.
Everything else could dump. You can invest right now if that's your goal, with coins like GRT, PRQ.. People expect prices of such coins to go up in 2021.

Protip: avoid swing trading and day trading with all your capital. Honestly if you're not sure what you're doing I would just put all in BTC and forget it for a year or two

Sign up on Binance, use Referral ID VFZQTCLB for 15% less fees, set up automatic orders that accumulate BTC/ETH/LINK every week or month, don't look at your Portfolio for 5 years. There, that's the easiest method to make it, no worries, no 24/7 monitoring or daytrading, just averaging your buy-in price and waiting.

PS: Nobody has a magic crystal ball, but these are the safest in terms of potential risk and return.

the value of any given crypto is 100% based on hype, this makes things very volatile and anything could as easily crash as it could soar. the only "safe" things are more or less btc and eth, and then maybe MAYYYBE link. just dollar cost average (dca) into those until you have familiarized yourself with this stuff, lurk /biz/ and don't buy the shit you see shilled until you have recognized the shitcoin of the month cycle that is always going on here.
most normie friendly exchange is coinbase, use coinbase pro for slightly cheaper fees. or coinmetro

what is the argument against buying ETH now? my other confusion has always been with the supply - it's uncapped? Doesn't that seriously affect the price? I am looking to buy BTC or ETH and park it into BlockFi or Celsius for some decent % interest

Whatever you do, that majority of your portfolio should be BTC. Dabble in shitcoins if you want, but always make sure the majority of your portfolio is in BTC.

Looking at the charts of the 2017 bitcoin bullrun, now would be a good time to buy ETH with the likelihood of it going parabolic in mid Jan as it did in Jan 2018 once BTC capitulated. With the SEC shit going on and the recent proposed regulations on stablecoins you take a risk with any of the smaller coins but you could also look at it as buying them at a discount. They have a chance to go the same route as ETH in Jan or they could hit rock bottom thanks to the SEC/Whitehouse developments.
