Trustable DeFi projects typically push their ERC-20 token's source code to etherscan so you can check yourself within 1 minute if the requirements (no mint function and no token ownership) are fulfilled. People who don't check the source of an ERC-20 token before throwing money at it sure as fuck won't care about it being create by unilock either. Also, rug pulls are still possible nothing prevents the owner of a token from just holding the majority of his tokens.
