Ripple is most definitely the most stable coin out there with a high demand. When banks use crypto for large-scale remittance, their costs are way way down, but they can't use most coins for remittance because they are just way too volatile. Within three weeks, bitcoin/ethereum have mooned and crashed twice. Ripple has hardly moved at all. When you wire cash, you don't want 20 million to turn into 16 million before the transaction has even been completed.
