They say that nursing is a lucrative field with plenty of jobs, but how realistic will it be to pay off my debt in a short amount of time? I plan on living like a peasant, and devoting as much as my income as I can to paying off the debt. I’m aiming at paying it off within 2-3 years.

I just applied for the field tech job. It paid $15 per hour. I put that I knew QGIS and all the ESRI programs, which I'm sure you used plenty of during college. My only work experience before that was a cable guy running copper for the Army (as a civilian) which I called that position "infosec technician" on the resume.

The GEOINT stuff I got into by getting Comptia Sec+ and some windows sql server certs (paid for by the field job), then got a meme security clearance. The Afghan gig i got purely thru connections with lonely boomers at the GS geoint job.
